Most humans don’t believe that a cooked breakfast can be healthy. Well this one is! The best part is the unusual colour of the eggs!
1 tblsp milk
4-5 baby spinach leaves
1 slice of ham
1 slice wholemeal bread
What to do
Finely chop the spinach and place in a frying with a lump of butter. Cook on a low heat until the spinach becomes soggy.
Crack an egg into a bowl then add the milk. Whisk until semi-mixed and then pour over the spinach, constantly moving it around, scrambling it. Continue this for a few minutes then place on top of the bread or toast. Add ham and tomato, and then you are ready to serve and enjoy!
